Perfect for lunch, as a starter or a quick snack: Our nordic-inspired Beetroot and Potato salad. It’s so easy, the recipe consists of only two sentences. All you have to do in advance is cook the potatoes and beetroot, you can also get cooked beetroot in most grocery stores.

4 beetroot, cooked 3 medium potatoes, cooked 1 medium apple ⅓ cup of walnuts, coarsely chopped 4 pickles 3 tbsp vegan mayo 4 tbsp vegan yoghurt ½ bunch of dill, coarsely chopped 2 tsp horseradish, grated juice of ½ lemon salt & pepper optional: 1 tsp caraway seeds

Dice the beetroot, potatoes and apple. Mix all ingredients together and let the salad sit for a few minutes.
