We had the absolute pleasure of trying out some of the spice mixes by Potluck and created a recipe with one of our favorites: the Tofu-Spice! It takes tofu from being bland and not tasting like much to being a hearty, spicy and delicious protein source.

For all vegans and vegetarians out there who need something tasty and fun to bring to a BBQ, this one’s for you!

Serves 2

1 block of (extra) firm tofu (300g) 2 tbsp olive oil 1 tbsp soy sauce 1 heaping tbsp of Potluck Tofu Spice

1 zucchini 1 large red onion 1 cup button mushrooms (100g)

wood or metal skewers

Pat the tofu dry and cut it in cubes (about 3x3cm/1x1inch). To a shallow bowl add the tofu cubes, 1 tbsp of olive oil, soy sauce and tofu spice. Carefully mix everything together and coat the tofu in the spices. Let this marinate for at least 2 hours. Cut your veggies into bite size pieces. Take your skewers and alternately skewer vegetables and tofu. Add another tablespoon of olive oil and add it to the leftover marinade. Brush the skewers with the remaining oil and spice mix. Heat up your grill to medium-high heat and grill your skewers for about 10 minutes, turning them around as they cook. Serve with a vegan yogurt-dip or your favorite BBQ sauce, some carbs like bread or potatos and a fresh green salad.
