If there is one snack we can’t get enough of – meaning we’ll eat the whole batch within an hour or two after we made it – it’s smoked almonds. And they are incredibly easy and quick to make too! You could have them as a snack, use them in our asparagus salad recipe or put them on a (vegan) cheese platter if you are feeling really fancy!
1 ⅓ cup almonds (unpeeled) 1 tbsp olive oil 1-2 tsp smoked salt 1 tsp smoked paprika
Preheat oven to 180°C (350°F) degrees fan. Spread the almonds in an ovenproof dish (or on a baking tray) and roast in the oven for about 5 minutes. Remove the almonds from the oven and mix with olive oil and spices. Roast again in the oven for about 10 minutes, stirring once halfway through. Remove from the oven and season to taste, then leave to cool.
