This is a quick and easy quick granola that’s best served with your favorite plant-based milk or yogurt.
3 cups rolled oats (optional: certified gluten free oats)
⅓ cup buckwheat
⅓ cup flaxseed
¼ cup pumpkin seeds
½ cup walnuts, coarsely chopped
½ cup almonds, coarsely chopped
2 tsp ground cinnamon
a pinch of salt
⅓ cup maple syrup
5 tbsp coconut oil, melted
(optional: 2 tbsp plant-based protein powder)
⅔ cups dried cranberries, coarsely chopped
Preheat oven to Fan 160°C/320°F. Cover a baking tray with baking paper. Mix all ingredients except cranberries in a large bowl until well combined. Spread the granola evenly on the prepared baking sheet. Roast in the oven for about 20 minutes (mix once after 10 minutes). Let cool, mix in cranberries and fill into jars. Tastes best with plant-based milk or yogurt.
